“Mar de Avellanas, is not only a place I designed, it’s also a place I take my friends and my clients to when they come to Valencia. I love their food, they understand gastronomy at the highest level but use clever fresh from the market ingredients that always surprise me”. It is no surprise then that the cuisine at this Valencia restaurant acts as a metaphor for Hayon’s approach to the design, just as only the finest ingredients pass through the kitchen, his thoughtfully stylish interior features designs from the collections he has created with some of Europe’s finest brands; diners are comfortably seated in chairs from Expormim, lights from Parachilna add warmth, setting a mood of carefully constructed comfort and elegance. His signature graphic flourishes appear in the doorways and playfully dotted windows. The rich red tones of the restaurant are reflected in the chic seating by Expormim that invite people to sit and enjoy a cocktail in Inventario the bistro bar that is the companion space to the restaurant, set on the other side of this central Valencia location. Hayon has created for both the restaurant and the bar, a modish mix of urbane sophistication, mixed with an inviting Mediterranean warmth.
